Lox, Stock & Bagels is a South Eugene shop built around a simple commitment: make everything from scratch. Each evening the dough is shaped by hand, and every morning the bagels are boiled and then baked, following the traditional method that gives a bagel its distinctive crust and chew.

A Team That Keeps Things Fresh

Owner Maxwell Davis credits the people around him with keeping the menu alive. The crew rotates through a range of flavors, from a Flaming Hot Cheetos cream cheese rolled out for 4/20 to a matzo ball soup offered for Rosh Hashanah. The willingness to experiment, Davis says, is what keeps the work feeling like a journey rather than a routine.
