Paper Plate BBQ Is Bringing Backyard Spirit to a Higher Level
From a little truck in the courtyard of ColdFire Brewing, Isaiah Watson is slow-cooking Eugene's cravings one 22-hour brisket at a time.
A Truck with a Long Day's Work Behind It
Paper Plate BBQ operates out of a food truck parked in the courtyard of ColdFire Brewing, and the menu reads like a backyard cookout elevated by serious craft. Brisket, pulled pork, ribs, chicken, wings, and freshly baked cornbread muffins are all on offer, alongside sides made entirely in house.
Upscale Barbecue, Paper Plate Mindset
The name is intentional. Watson sees a connection between the easy, unpretentious feeling of eating off a paper plate in someone's backyard and the kind of welcome he wants guests to feel when they pull up to the truck. The food, though, goes further than the name suggests.
“Paper Plate Barbecue reminds me of Eugene, because it's like backyard barbecue, thinking of paper plates, except I'm doing upscale barbecue. You just don't expect that when you come here, and I felt like Eugene needed that.”

Why Eugene, Why Now
Watson is clear that Eugene is home, and that the city called for exactly this kind of business. He felt the area needed something that surprises people, a place where the quality catches you off guard in the best way. Paper Plate BBQ is his answer to that gap.
